The estate has always paid a special attention to the production of high quality oil. The area offers an excellent product as it is sheltered from cold weather, has a good exposure to sun and to dry and mild winds, together with the presence of traditional autochthonous varieties such as: moraiolo and leccino. Olives are hand-picked and in the same day they are taken to the oil mill and cold pressed. The oil obtained is characterised by intense herbaceous perfumes with artichoke and tomato hints. This olfactory sensations are confirmed on the palate as it has a perfect balance between bitter fruity and
spicy taste. The preservation is carried out under controlled temperature in stainless steel containers which maintains the peculiar characteristics of harmony and pleasantness until the following year. The oil made at Villa La Ripa is good on raw and cooked vegetables and is especially good on traditional Tuscan dishes such as panzanella and ribollita.

 
     
   
 

The 16th century deeds under the seal of a notary say that Villa La Ripa Estate has always been planted of “olive trees, vines and fruit trees”. The Etruscans used to grow olive trees on these hills and we are still preserving this tradition! As the olive oil quality depends almost completely on nature (we just harvest and press the olives), our oil will bring the perfumes and aromas of our Tuscan hills directly into your dishes.

Nowadays olive oil is also appreciated in Europe and world-wide as it is good for our health and it has good food value and favourable organoleptic properties. Olive oil plays a leading role in the Mediterranean diet.
It has a low melting point, it doesn't oxidise, it has got anti-oxidising properties and it can lower the level of plasmatic cholesterol. Scientific studies also show that olive oil, together with a limited use of saturated fats, a nice glass of red wine and a large use of carbohydrates, cereals, vegetables and whole-bran foods in general, is one of the essential characteristic of Mediterranean Diet.
